2012 Olde Hickory Pro-Am Homebrewing Competition
CLASS Homebrewers third annual Olde Hickory Pro-Am competition will be held on Saturday, March 31st, 2012 at the Olde Hickory Brewery in Hickory, NC.

Olde Hickory Pro-Am Competition Rules
An AHA/BJCP Sanctioned Competition
- Acceptable beer styles under the BJCP style guidelines are Categories 1-16 and 18-23. Categories 5D, 17A-F, and 22C are not permitted.
- Entries may be brewed from malt extract, all grain, or a combination of both.
- Olde Hickory must be able to brew your beer (from grain to glass) in no more than 45 days.
- Olde Hickory uses the following yeasts:
- Wyeast 1056 American Ale (Substitute with White Labs 001 California Ale or Safale US-05)
- Wyeast 2007 Pilsen Lager (Substitute with White Labs 840 American Pilsner Lager or Saflager W-34/70 dry yeast)
- Wyeast 3068 Weihenstephan Weizen (Substitute with White Labs 300 Hefeweizen Ale or Safbrew WB-06 dry yeast)
- Wild yeasts (brettanomyces, lactobacillus, other bacteria, etc), mead or wine yeasts are not permitted.
- Olde Hickory has access to most commercially available malts; it is suggested that homebrewers use those malts commonly available at local homebrew shops.
- Entries must be brewed from start to finish on a non-professional homebrewing system.
- It is suggested that brewers use pellet type hops in their entries.
- Entries will be accepted from amateur brewers 21 years of age or older from North Carolina, South Carolina, Virginia, Tennessee, and Georgia. The winning brewer will be responsible for their own transportation to the brewery on the day the winning recipe is brewed as well as arranging to pick up an allotted amount of the finished beer.
- The winning brewer will be allowed to help brew his/her winning recipe at the Olde Hickory Brewery.
- The winning brew will also be entered into the GABF Pro-Am competition and the winning brewer
will receive a “Brewer’s Pass” to the GABF in Denver, CO, in September 2012. - There is no limit on the amount of entries a brewer can enter.
- Entrant must be an active American Hombrewers Association member to win Best of Show
- Entry fee is $6 per entry.
Olde Hickory Brewery will take the Best of Show recipe and reproduce it as close to the original recipe as possible on their professional system with the help of the homebrewer. By entering the competition, the winning homebrewer agrees to disclose their complete recipe to Olde Hickory Brewery and grant Olde Hickory Brewery all commercial and intellectual property rights to the winning beer. Entering the competition constitutes permission for the Olde Hickory Brewery and its agencies to use your name, likeness, picture, signature, voice, audio and video recordings and biographical information in any manner or media whatsoever (whether now known or hereafter devised) anywhere in the world in perpetuity for the purpose of advertising and trade, without further compensation, unless prohibited by law. Entries without full recipe details cannot be selected for Best of Show.
Judging (and Stewarding) the Competition
The Olde Hickory Pro-Am needs volunteers to judge and steward. Judges of all experience levels may volunteer. Breakfast and lunch will be provided. Judges and stewards should use the online form under the Online Registration link or you may contact competition organizer Jason Howard at jason@howardhomes.us.
Entering Beer
The Olde Hickory Pro-Am is open to all amateur homebrewers 21 years of age or older from North Carolina, South Carolina, Virginia, Tennessee, and Georgia. No professional brewers or Olde Hickory employees or their immediate family members are eligible. Beers must be brewed at home from start to finish. Beer brewed in a commercial brewery or a brew-on-premises facility (BOP) is not allowed. Fresh malt extract from a brewery is not acceptable. Dry or liquid extract intended for homebrewing is allowed. All entries and payments in full must be received by the date specified below. This deadline applies to every entrant, without exceptions. Late deliveries will not be accepted or returned.
Cost to Enter and Entry Limits:
Each entry is $6.00 payable to CLASS Homebrewers.
There is no limit on the number of entries.
Please note that the registration fees for this competition will be used exclusively to cover the cost of producing the Olde Hickory Pro-Am.
Entry Eligibility:
Plain 12 ounce brown or green longneck bottles with plain caps are required. The bottles must have no raised markings or labels except the rubber-band-attached competition label. If you can only provide distinctive bottles, please contact the organizer for approval. Bottles and shipping materials will not be returned. Entries that do not meet the above stated criteria may be disqualified at the organizers discretion.
Entering Procedure:
- Prepare 2 bottles of each entered beer.
- Register Online (beginning 2/20/2012).
- Complete the Bottle ID Forms; print and cut-out the 2 bottle labels per entry.
- Complete the Recipe Form. Please use the generic Recipe Form to help maintain anonymity in the event the Best of Show judges need to refer to recipe specifics.
- Enclose each label in a plastic (sandwich) bag and attach to each bottle with a rubber band. Do not use glue or tape.
- Make a check payable to CLASS for the total of your entries ($6 per entry). Please ensure that the check identifies the entrant. Checks shipped with beer entries should be enclosed in a plastic bag to prevent smearing or soaking.
- Deliver entries, checks, and recipes as noted above to the following location (all entries will be placed directly into the beer cooler promptly upon delivery). If you prefer to ship your entries please ship them to the address below and ensure that they will be delivered during business hours Monday – Friday. Please use bubble wrap when packaging your beer – no packing peanuts please.
Deliveries will be accepted on Monday – Friday 10am-5pm.

Entries need to be at these store locations no later than end of business hours Friday March 23rd, 2012.
Entries must be registered by the deadlines outlined on the competition rules.
Winning:
Medals will be awarded to all 1st, 2nd, and 3rd place flight winners. These winning beers will then be judged in a Best of Show round to determine the winning beer to be brewed by Olde Hickory Brewery. Beers that achieve a high score (40 or higher) but do not place 1st, 2nd, or 3rd may also be pushed to the Best of Show round. The competition organizers reserve the right to combine style categories for judging and awards.
The Best of Show winner will receive a “Brewer’s Pass” to the GABF in Denver, CO, in September 2012. The winning brewer is responsible for their transportation to/from the festival and all lodging and expenses.
